Fungal amylase is a liquid amylase preparation fermented by aspergillus. Fungal amylase hydrolyzes starch into maltotriose, dextrose and other oligosaccharides. The optimum saccharification condition depends on the PH, temperature, substrate concentration and enzyme dosage.
